Mocktails with popping pearls: party drinks, no alcohol

Every drink here is alcohol-free, cold and quick enough to make while the guests arrive. Most are a base you already know, something fizzy or something desi, and one cup of popping pearls tipped in last so they drift down through the glass.

Hibiscus is floral up front and tart on the finish, Peach is soft and juicy, Lemon is bright and zesty. For a party, count one cup per glass: the cups do the portioning, so there is nothing to measure and nothing left open. Start with the five-minute fizz, then the desi glasses, then the trays and jugs that serve a whole room. Eighteen mocktails in all.

Five-minute fizz

Sparkling water, ginger ale or tender coconut water, a squeeze of lime, ice and a cup of pearls. Three or four minutes each.

Lemonades and juice

The pink in the pink lemonade comes from the hibiscus pearls. Pomegranate juice gets a tart edge in the same deep red.

Desi mocktails

Shikanji, jaljeera, ganne ka ras and rose milk. The masala is stirred in, the pearls go in after the ice, and the jaljeera's boondi goes on top at the very end.

For a crowd

A punch, a tray of shot glasses and a lassi bar. One cup of pearls per glass, so the cups count the guests for you.

Festive

A cranberry sparkler for Christmas and a red-and-gold sparkler for Diwali, both in flutes.

The rule: cold, and last

Pearls are a finish. They go into cold or room-temperature food and drink, after the ice and the pour, and they are never boiled, baked or blended. One 40 ml cup is one serving, so every recipe here counts pearls by the cup.

What popping pearls are, and what is inside one

Build your own

A base: iced tea, lemonade, nimbu pani, juice or cold milk. Something fizzy, if you like: soda, sparkling water, ginger ale or tonic. Ice, then one cup of pearls, last.

Pearls never go into anything hot and never into the blender. Running a mocktail counter at a wedding or an office party? One sealed cup per guest is the whole plan.
