Peach Pearl Fruit Custard, the Sunday-lunch dessert
  1. Mix the custard powder with a little cold milk. Boil the rest of the milk with the sugar, stir in the paste and cook for two minutes until it thickens.
  2. Let it cool, then chill for at least two hours.
  3. Fold in the fruit, spoon into four bowls and tip a cup of pearls over each just before serving.

Fruit custard is soft all the way through — custard, banana, apple. A cup of peach pearls on each bowl puts a burst of peach between the spoonfuls.

What you need

  • Peach pearls4 cups
  • Milk500 ml
  • Vanilla custard powder2 tbsp
  • Sugar3 tbsp
  • Chopped fruit (banana, apple, grapes, pomegranate)a big bowlful

The custard must be fridge-cold before the pearls go on. Warm custard softens them.

One cup is one serving, so this recipe counts pearls by the cup rather than in grams. Nothing on this page is a claim about what the pearls do.
