Lemon Pearl Panna Cotta, set tonight, served tomorrow
  1. Whisk the agar into the cold milk, add the cream and sugar, and bring to a boil, stirring. Simmer for two minutes.
  2. Take it off the heat, stir in the vanilla and half the zest, and pour into four small glasses.
  3. Let them cool, then chill for at least three hours until set.
  4. Tip a cup of pearls over each glass and finish with the rest of the zest.

Panna cotta is cream that wobbles — smooth, rich and a little plain. Lemon pearls on top cut through it with a sharp, bright pop.

One cup is one serving, so this recipe counts pearls by the cup rather than in grams. Nothing on this page is a claim about what the pearls do.
