Why it worksA fizz is all foam and bubbles with no texture under it. Pearls at the base give the glass a second act.

What you need

  • Hibiscus pearls1 vial
  • Gin50 ml
  • Lemon juice25 ml
  • Sugar syrup15 ml
  • Aquafaba20 ml
  • Sodato top

Method

pearls last, always
  1. Dry shake the gin, lemon, syrup and aquafaba hard.
  2. Shake again with ice, then strain into a chilled highball.
  3. Top with soda, then tip the pearls in through the foam so they settle at the bottom.
