Affogato, Hibiscus Pearls

Why it worksAn affogato is finished in four spoons. The pearls put something to bite in the last two.
What you need
- Hibiscus pearls1 vial
- Vanilla ice cream1 scoop
- Espresso, pulled fresh, cooled to room temperature30 ml
Method
pearls last, always- Pull the espresso first and set it aside to cool to room temperature — a couple of minutes is enough.
- One scoop in a small bowl or a short glass, once the espresso is no longer hot.
- Pearls on the scoop, to one side. Pour the cooled espresso beside them, not onto them, and eat straight away.
The espresso has to be at room temperature before it meets the pearls, never poured hot — heat is what undoes one.
