the slice that needed a sauce
- 3 min to plate
- 1 slice
- easy
- Hibiscus

Why it worksCheesecake wants acid and usually gets a coulis somebody had to make that morning. A vial of pearls does the same job with no prep.
What you need
- Hibiscus pearls1 vial
- Baked cheesecake, chilled1 slice
- Mint1 small leaf
Method
pearls last, always- Plate the slice cold, straight from the fridge.
- Pearls in a loose line down one side, not piled on the slice.
- One mint leaf, then straight out.
Kitchen note: a finish, plated on order. Never a prep item.

One vial is one serving, so this recipe counts pearls by the vial rather than in grams — the fill is still being set with our manufacturer. Nothing on this page is a claim about what the pearls do.
